The article suggested a warm bacon dressing for a scallop salad. That sounds divine! Maybe even a bacon-mustard salad dressing.

I wonder if scallops pair well with any kind of fruit? Maybe citrus? I know most fish and/or seafood works well with orange or lemon flavors. I wonder how it would work with grilled pineapple?

Something that occurs to me is to make up a good citrus vinaigrette. Then, grill the pineapple slices and scallops. Serve the scallops in the center of the pineapple slices on a bed of greens and drizzle with the dressing. Now I'm making myself hungry.

I really don't see how it could be possible to have a bad idea for a scallop salad! Scallops are so delicious, and just having them seared on a bed of greens with a nice vinaigrette sounds just about perfect to me. I'm sure a gourmet cook could come up with some kind of frou-frou dish, but when you have great ingredients like fresh scallops, who needs frou-frou?

I'd probably do a seared or grilled kind of preparation for a salad. i think you need that taste and texture since a salad is simple, so the individual flavors need to stand out.
