Other muffin ingredient options include a variety of vegetables, such as zucchini, pumpkin and spinach. The muffins can also be made using meat and seafood, such as sausage and tuna. Eggs are a naturally low-carb food and are featured in many low-carb muffin recipes, including chocolate soy low-carb muffins.

Different types of fruit are used for flavor in many low-carb muffin recipes. Blueberry muffins can be made low-carb by using soy flour, heavy cream and a sugar substitute. In addition to blueberries, blackberries, raspberries and cranberries can also be featured in low-carb muffins. Blueberry bran muffins can be made by adding wheat bran to the mix. Banana muffins that are low-carb feature flax seed meal, mayonnaise and low-fat banana syrup.

Other dessert-style low-carb muffins include chocolate soy low-carb muffins. They feature soy flour, eggs and cottage cheese. They are flavored with unsweetened cocoa, vanilla extract and sugar substitute. Low-carb, sugar-free cream cheese muffins feature cream cheese, sugar substitute and eggs. Low-carb doughnut muffins are made using flax seed, almond meal and melted beer. They also features buttermilk, sugar substitute and cinnamon.

Vegetables can be used in many low-carb muffins, including low-carb zucchini muffins. The skin is left on the zucchini, which are diced into small cubes before being added to the batter. Low-carb pumpkin muffins feature pumpkin, allspice and ground cloves. They also include almond milk, sugar substitute and eggs. Veggie frittata muffins feature assorted vegetables, including leeks, zucchini and spinach. They also are made with feta cheese, low-fat sour cream and eggs.

Meat and fish can be featured in low-carb muffins. Low-carb tuna muffins are made using tuna, celery and onions. They also feature minced green peppers, cheddar cheese and seasoning. Low-carb egg muffins do not feature any bread. They are made by pressing bulk sausage into the bottom and sides of muffin tin cups and baking; an egg is then placed into the muffin cup and placed back in the oven. When finished baking, the muffins are topped with American cheese.

Many low-carb muffins also feature nuts. Low-carb macadamia nut and mock banana muffins are made with soy four, heavy cream and banana extract. The recipe also includes wheat bran, club soda and coarsely chopped macadamia nuts. Flax muffins feature ground flax seeds, whey protein powder and chopped nuts.
